THE MAKARS MASH BAR IS GROWING LION’S MANE MUSHROOMS AT SUMMERHALL

Following the success of the Lion’s Mane dish on our own menu, we decided to quadruple production of our unique Lion’s mane mushrooms in a bigger dedicated space at Summerhall.

With the help of our expert in mycelium, Chris, we grow substantial quantities of lion’s mane mushrooms both for our menu and for our partners.

Lion’s mane mushrooms is a healthy and sustainable meat alternative as well as being truly delicious in its own right.

Researches online suggest that Lion’s Mane mushroom is good for our brain, our heart and our gut.

Our dream ? Reduce the quantity of meat we are serving in favour of more ethical and sustainable dishes.

We’re  proud to be serving this unique dish to our guests who have commented on its incredibly meaty texture. Its texture is indeed like chicken but the taste is richer and deeper.

Superfood has become a generic term used to describe everything and anything but according to researchers, lion’s mane mushrooms really do wonders for us. Packed with antioxidants they are a powerful ally to fight diseases. Research shows they boost brain cell production in young and old !

 

What makes our own lion mane so sustainable is that we are growing them on site. We are making use of what used to be dead-space and drastically cutting down on transportation thus reducing our carbon footprint.

 

We call it basement to table magic.

 

Our long-term goal is to produce our own substrate to grow the mushrooms thus further reducing our environmental impact by making use of kitchen waste, such as our potato peels. Talk about going full circle.
