At Makars we are committed to offering guests choices. Our goal is to have something for everyone.
We put the same amount of effort into sourcing our lamb, haggis or certified Scotch Beef as we do with our plant-based and mushroom dishes.
Lion’s Mane mushrooms are delicious, packed with potent antioxidants to fight disease & able to boost brain cell production but incredibly difficult to source.
John our founder was “obsessed” with getting them fresh (not dried as other restaurants) to preserve the delicious meat-like texture of this true wonder food.
You will see Lion’s Mane for sale in wholefood stores for more than £50 per kg. Frustrated by the cost (it takes 340g per serving), the Makars team developed their own advanced Lion’s Mane indoor farm in Edinburgh. This allows us to offer you this premium unique vegan food at a cost we think is fair.
Our long-term goal is to produce our own substrate mix in which to grow the mushrooms, thus further reducing our environmental impact by making use of kitchen waste.
Maybe it wont save the planet, but it does offer a genuine healthy alternative to meat & means a real choice for our guests.
